Hummus ist eine Spezialität aus 1.001 Nacht. Es besteht hauptsächlich aus Kichererbsen, Tahin, Knoblauch und Zitrone. Diese werden nach Belieben mit typisch orientalischen Gewürzen abgeschreckt und mit Salz verfeinert. Hummus ist reich an Eweiß und Ballaststoffen und kann als Beilage zu vielen Gerichten serviert werden.

10-20 Kichererbsen zum Dekorieren beiseitestellen, Zitrone waschen (falls sie gewachst ist, mit heißem Wasser das Wachs abspülen) und die Schale fein reiben.

Knoblauchzehe schälen und sehr fein hacken.

Schritt 5

Kichererbsen mit Tahin und ca. 100 ml Wasser und 100 ml des aufgehobenen Kichererbsenwassers in eine Schüssel geben und mit dem Stabmixer eine
ganze Weile sehr fein pürieren.

Schritt 6

Konsistenz prüfen und bei Bedarf Wasser zugeben (Hum mus sollte weich sein, aber nicht vom Löffel tropfen).

Schritt 7

Einen Teil der geriebenen Zitronenschale und des Zitronensafts dazu geben und mit Salz abschmecken, alles kräftig umrühren 9. Probieren und je nach Geschmack den Rest der Zitrone zugeben.

Schritt 8

Anschließend alles in eine weite Schüssel umfüllen und mit den ganzen Kichererbsen garnieren. Ich gebe gerne noch einen Schuss Olivenöl dazu. Mit frischem Brot einfach schmecken lassen.
